Both Ayurveda and Balinese traditions view food as central to well-being. This fusion begins with shared fundamentals:

  • Healing spices like turmeric, ginger, galangal, and lemongrass are staples in both traditions.

  • Emphasis is placed on seasonal, fresh, and local ingredients that align with your body’s natural rhythms.

  • Meals are crafted to include all six tastes (sweet, sour, salty, pungent, bitter, astringent), which is key to achieving balance in Ayurveda.


This approach creates dishes that not only satisfy your palate but also enhance digestion, immunity, and emotional harmony.


Signature Recipes from Our Kitchen


1. Jamu - Turmeric Elixir (Kunyit Asam with an Ayurvedic Twist)

A detoxifying drink that stimulates digestion and boosts immunity.

Ingredients

  • 2 inches turmeric, 1 inch ginger, 1 tbsp tamarind paste

  • Juice of 1 lime, pinch of black pepper, 2 cups warm water

  • Optional: raw honey (for Pitta/ Kapha)

Method

Blend the ingredients, strain, and serve warm or chilled.

Dosha Tips

  • Vata: Add cinnamon for warmth.

  • Pitta: Use coconut water for a cooling base.

  • Kapha: Add cayenne pepper for an energizing boost.

2. Balinese Ayurvedic Kitchari

A comforting one-pot dish rich in protein and easy to digest.

Ingredients

  • ½ cup mung dal, ½ cup red or jasmine rice

  • Turmeric, cumin, coriander, galangal, and lemongrass

  • Water, salt, fresh basil or moringa

Method

Sauté spices in ghee, add grains and water, and simmer until soft.

Dosha Tips

  • Vata: Use more ghee and warming spices.

  • Pitta: Substitute water with coconut milk.

  • Kapha: Reduce rice, increase warming spices.

3. Ayurvedic Lawar Salad

A revitalizing salad packed with herbs and gut-healing properties.

Ingredients

  • Shredded coconut, steamed long beans, grated zucchini

  • Turmeric, ginger, lime juice, basil, moringa, and sesame seeds

Method

Toss all ingredients and allow to marinate before serving.

Dosha Tips

  • Vata: Add sesame oil for grounding.

  • Pitta: Use extra coconut and mint.

  • Kapha: Add chili flakes to awaken digestion.
